Standard dynamic range was designed around the limits of old televisions. HDR raises the ceiling, letting a sunset or a lit screen keep detail that would otherwise blow out, and it widens the colour space at the same time. YouTube accepts HDR uploads graded in Rec. 2020 using PQ or HLG, and the file has to carry HDR metadata or playback will be wrong. Viewers on devices that cannot display it get an automatically converted standard version, which YouTube says can miss on difficult material. Watch that version before you call the grade finished.
