Notion, Trello, Asana, Airtable and their equivalents all do the same job here: one board with a column per stage, one card per video, an owner and a date on each. What makes it a production system rather than a to-do list is that the card carries its own script, thumbnail drafts, links and notes, so the whole video lives in one place.

Most creators over-build this. An elaborate database with twelve properties gets abandoned inside a fortnight, while a board with five columns survives for years. The tool that works is the one you will still update on a bad day, and any of them beats the mental list that quietly loses a half-edited video for three weeks.
