Subscribing is a viewer telling YouTube they want more from a channel. New uploads then land in that viewer's Subscriptions feed, and anyone with notifications set to All can get a ping as well. Above 1,000 the public count is abbreviated, which is why a channel appears stuck on 10.2K for a fortnight.
The mistake is treating the number as your audience. For most channels the large majority of views come from people who are not subscribed, and a subscriber base has genuinely mixed interests rather than wanting everything you publish.
